I am a stay at home mom who is searching for an answer to the world's most mysterious question...What is for dinner??? Last year I cooked 365 different slow cooker recipes in 365 days. Am I a little crazy? Yes, apparently I am. However, I now have about 250 great crockpot recipes in my repertoire, and my meal planning is a breeze. I hope you benefit from my year of craziness by enjoying a nice, slow cooked meal.

Slow Cooking a Whole Chicken

Cooking a whole chicken is an economical way to make the protein source go far in your meals.  I have to admit I was scared to cook a whole chicken.  All those bones and things kind of freaked me out.  Plus the yucky skin.  However this is hardly yucky at all.  All you do is take off the packaging of the chicken and put it in your big crockpot.  Put a cup of water in the bottom of the slow cooker, cover, and cook on LOW for about 6-8 hours.  The meat should just fall off the bone.  If you want you can skin the chicken beforehand but if you’re scared like I was you can just keep it on until it’s cooked and then take it off.  My chicken was 5 pounds and it made 5 cups of cooked chicken.  I packed it in freezer ziploc bags and will use it in the future for chicken tetrazzini, chicken enchiladas, chicken broccoli casserole, etc.  So easy and so cheap!
