On the 3rd day of Christmas…Sweet Potato and Apple Bake

On the 3rd day of Christmas my true love gave to me…a healthy and delicious recipe!!!
This is a wonderful, healthy twist on sweet potatoes.  The apples bring out the sweetness of the potatoes and you won’t miss your usual candied marshmallow sweet potatoes!


Makes 6 servings

3 sweet potatoes, peeled and cubed
2 golden delicious apples (or other variety), sliced
Canola oil
Salt and pepper

1.  Spray slow cooker with non-stick cooking spray.
2.  Place the apples and sweet potatoes in the slow cooker.
3.  Brush the sweet potatoes with oil (probably about 1-2 Tbsp).  Salt and pepper the sweet potatoes.
4.  Cover and cook on LOW for about 3-5 hours, or until sweet potatoes are soft.
