Hi! I'm Karen, a stay at home mom and blogger. Mostly I write about the new foods and recipes I've been making at my house. I like nutella, avocados, muddy buddies, mushrooms, tomatoes, peaches, berries, beans and rice, dark chocolate, cilantro, peanut butter, fried eggs and a million other types of foods. Most of the time, I like to make really easy and simple recipes--that's why I use my slow cooker a lot! I hope you find my posts helpful! Please comment and let me know when you make one of my recipes!

Recipe for Slow Cooker Garlic Lime Chicken

I’ve done a ton of slow cooker chicken recipes–a ton!  And this remains one of my favorites.  It’s fast to get in the crockpot, has easy ingredients and tastes great.  Serve with a salad or broccoli and you have a meal!

Makes 4 servings

6 bone-in chicken thighs
1/2 cup soy sauce
1/4 cup lime juice
1 Tbsp Worcestershire sauce
2 garlic cloves, minced
1/2 tsp dry mustard
1/2 tsp ground pepper
1 Tbsp quick-cooking tapioca

Place chicken in slow cooker. Combine remaining ingredients and pour over chicken. Cover and cook on LOW 4-6 hours.  Serve chicken and sauce over rice.

Made last night and it was delish, I used low sodium soy sauce, dry mustard and cornstarch being this is what I had. Will definitely make again, thanks.

Honestly, thanks for commenting this was delish with using cornstarch instead of tapioca. I have zero tapioca in my cabinet and need to put this on tomorrow morning!

Do you use skinless boneless thighs?

This was easy and delicious! Meat fell right off the bone. Love that its whole foods too. I forgot to add the tapioca and it turned out to be a nice light sauce. Made a double batch of the sauce and froze half – looking forward to round 2!

Anyone add garlic since it’s called garlic lime yet there’s no garlic in the ingredient list?

My chicken turned out nothing like the chicken in the picture…. Is that normal? Lol
