Slow Cooker Savoury Sesame Chicken

Disclaimer:  I am normally not a slow cooker fan.   However… there is certainly something to be said for loading everything into that slow cooker, switching it on, and (assuming no electrical outages occur) serving up a lovely meal some hours later.  And this super easy Slow Cooker Savoury Sesame Chicken dish passed my oh so picky taste testers, and was honestly delicious.

{So delicious in fact, I failed to snap a quick photo of it before it was eaten up.  Every.  Single.  Bite.}

But I promise to follow up with another yummy slow cooker recipe, and a photo of this one (since it’s now on our official Favorite Foods list).

This served seven of us, with leftovers.  (And I have teenage boys!)

What You’ll Need

4 pounds trimmed Chicken Breasts or Tenders, chopped into chunks.
1 Cup Honey
1/2 Cup Soy Sauce
1 Large, or 2 Small, Onions, sliced into rings
4 Tablespoons Ketchup
2 Tablespoons Olive Oil
1 teaspoon minced Garlic (up to 2 teaspoons if you like Garlic!)
2 Tablespoons minced Ginger (optional)
4 Teaspoons Cornstarch dissolved in 6 Tablespoons Water
Sesame Seeds
Steamed Rice

 

To Prepare:

Place chicken in slow cooker, arrange onions on top.  Combine soy sauce, ketchup, oil, garlic, and ginger (if desired).  Pour over chicken and onions.

Cook on high 3-4 hours.

Dissolve Corn Starch in Water (shaking it in a small container works great).  Use a slotted spoon to remove chicken and onion (some onion will be left behind, that’s ok) to a bowl and cover; leaving sauce in slow cooker.  Stir cornstarch mixture into sauce, and simmer fifteen minutes or so till thickened.

Return chicken and onions to thickened sauce.  Allow to simmer on low five to ten minutes, sprinkle with sesame seeds.

Serve alongside or over steamed rice.

N.B.  I’m also planning on adding broccoli or other veggies to this, perhaps making half again as much sauce and adding the vegetables an hour or so before serving time.
