Tilapia lettuce wraps

I made this concoction up tonight out of things I had in my fridge. I’m trying to stay away from white starches such as white rice which can be a little difficult considering my upbringing, but this recipe was so good with just fish and veggies as the main ingredients. I’m not good at meal planning or following recipes but this was pretty easy and it turned out great!

black pepper, salt, EVOO
Romain lettuce

-I lightly seasoned the tilapia and grilled on my George forman, you can also use a pan or bake it

Ingredients for veggie mixture:

fresh beets
EVOO and balsamic vinegar

– combine to taste

Ingredients for sauce: (I was going for tsaziki sauce but lacked all the ingredients but this worked great!!!)

Greek yogurt
Feta cheese with Mediterranean seasonings
lime juice ( I used a half lime)
salt to taste

I pulled off the longest romain leafs so that it could hold all the stuffings, then I layered on the yogurt sauce, then the tilapia, then I added the veggie mix, and a little squirt of lime juice.  Enjoy!
