We got back from spring break and had no food in the fridge. While I was at the store I started thinking of something quick I could do for dinner. It would be a late night after we got back from vacation and a quick trip to our farm.
Here is what I thought of…
Crescent rolls, roast beef, swiss cheese… FRENCH DIP SANDWICHES. Its been FOR-ever and a day since I had one and my kids had never even tasted one.
To make the au jus sauce, use beef broth, onion, worcestershire sauce, flour and white wine. I had the worcestershire and flour at home so I had to find small bottles of everything else. Luckily the small town grocery store had cooking white wine so I was in the clear.
We got home after checking on the farm and the growing wheat. I can honestly say I’ve embraced farm life. It’s such a pretty field.
Anyway, back to dinner.
Cut up the onion and sauté it on high in 1 tablespoon of oil. I used 1/2 the red onion and olive oil. This takes the longest. I am not a fan of eating onions but I do love the flavor they give.
2 cups of beef broth and simmer. Add worcestershire sauce, white wine, a dash of salt and let it simmer on medium. Add the onions and simmer on medium. Cool and add 1 teaspoon of flour to thicken.
Get a cookie sheet and spray oil on it or you can use parchment or wax paper. Roll out the crescent rolls. Then add your choice of cheese and roast beef on top. Then roll them up.
For a kick, you can use Horseradish sauce on the roll first, then cheese and roast beef. My kids don’t like horseradish, but I do.
Get a strainer and put over a bowl. Dump the onions and sauce into the strainer and there you have your Au Jus sauce.
Bake the rolls for the 11-13 minutes the package says and ‘voila’ you have French dip bites and Au Jus sauce for lunch or dinner.
